Maui Onions are the sweetest.
Note: If some of these peppers are unavailable in your area just use the one that is available, normally green peppers. Mexican Peppers of any kind may be used in this recipe, however be careful of the Hot ones.
Place Peppers and Onions in a Large Bowl and microwave about 2 to 3 minutes. In a seperate bowl combine:
1/2 Cup Olive Oil
1 TBSP Balsamic or Red Wine Vinegar
1 Large Clove of Garlic, mashed and minced.
1 Tablespoon of Freshly mashed Rosemary or 1/2 Tablespoon dried crushed Rosemary.
Salt and Pepper to Taste. OR,
Pour your favorite bottled dressing (like Newman's Own)over the peppers and onions. Toss Well.
Place Marinated Veggies on a Cedar Plank for Oven or a Cedar Plank for the grill. We like ours al dente but they are also great well done with the rich reduced dressing.
